I woke up the other day and Rob says to me "have you ever had Aunt Annie's pretzels?" I thought this was a trick question. Who has not had them? Really. Who has not had them because you really should have them. They are that good. Anyhow, it was not a joke. He just really likes soft pretzels and wanted me to make some. He even looked up some recipes for me to look over.
Most of the recipes I came across yielded far too many pretzels. I don't think Rob, Ellie and I need more than a few pretzels, do you?
Oh So Good Soft Pretzels Recipe
Ingredients
1 cup warm (not hot) milk
1 teaspoon active dry yeast
1 tablespoon brown sugar
2 1/2 to 3 cups all-purpose unbleached
1 teaspoon salt
2/3 cup baking soda
1 egg yolk
1 tablespoon kosher salt
1/4 cup melted butter, optional
Directions
- Preheat oven to 425 degrees.
- Grease baking sheet with butter and set aside.
- Combine milk, sugar and yeast in a bowl and allow to rest for 5 minutes.
- In mixing bowl, add 2 1/2 cups of flour, and salt.
- Make a well in the middle of the flour/salt mixture.
- Pour in milk mixture and mix. If the dough feels wet, add additional flour.
If using a stand mixer, mix with dough hook for 5 minutes.
If mixing by hand, mix the dough and then knead for 5 more minutes. - On a lightly greased surface, shape the dough into a log.
- Cut into 6 even pieces.
- With your hands, roll each piece into a short log-like piece and allow to rest for 5 minutes.
- Again with your hands, roll each of the 6 pieces into a long thin pieces, about 15 inches.
- Shape dough strings into pretzels.
There is a great step-by-step how-to shape pretzels tutorial over on TheKitchn. - Fill saucepan with approximately 10 cups of water and 2/3 cup baking soda.
- Bring to a boil.
- Gently, lift shaped pretzels and place side-by-side into the boiling water. You may or may not get all of the pretzels in at one time. I did mine one by one just to be safe.
- Boil for 30 seconds and remove with a large spatula. Allow excess water to drip off.
- Place boiled pretzels on baking pan.
- In a small bowl, mix egg yolk and 1/4 cup of water.
- Brush each pretzel with egg wash.
- Sprinkle with kosher salt.
- Bake for approximately 12-14 minutes or until brown.
- Remove from oven and allow to rest for 5 minutes.
- Brush with melted butter, optional.
