I know. I am a little crazy for baking two nights in a row but I love just about anything small and portable...muffins, cupcakes, sandwiches, etc. I think you get the idea. Anyhow, after such great success with the oatmeal cranberry muffins last night, I wanted to make a savory muffin with ham and cheese, too. I wrote down the recipe as I was creating them so hopefully, I got everything right but you never know.
Ham and Cheese Muffin Recipe
1 cup low fat sharp cheddar cheese
1/3 cup fresh grated parmesan cheese
2 cups reduced fat bisquick (yeah, I had some on hand that needed to be used)
1 1/4 cups skim milk
2 tsp. dried chives
1/2 tsp. pepper
1/2 tsp. salt, or to taste
1/2 cup chopped lean ham
- Preheat over to 400°.
- Mix cheeses, bisquick, chives, salt, pepper and ham
- Add milk and mix well.
- Spoon into lined muffin pans (approximately 1/2 full)
- Bake 15 minutes or until golden brown.
